An hour and 20 mins wait for a schnitzel

I've just had 'dinner' at DOG. Arrived around 7.40pm and ordered a Schnitzel. I was told the wait was about 20 mins which I accepted. The Schnitzel arrived at 9pm. Why not be honest with your patrons ? Just be honest and say it could up to an hour and a half. Then its my choice whether I wait or go down the road where I know I'll get better and much quicker service?
